At The Hindquarter we cook all of our food over open flame which is fueled by hardwoods from our land in Huntington, VT. We have custom Argentinian style grills crafted by local welder Mark Shattuck. This style is unique to our company and offers guests the opportunity to watch their meal being cooked directly in front of them.
Seared, baked, grilled, roasted.
When planning an event, we advise our clients to choose food that utilizes all of our grills. We sear on our chapas, we bake in the infiernillo, we grill over low coals on the ring of fire and we roast on our skewers and swords.
How will your food define your event?
There are a few things to think about for your basic menu structure:
Cocktail Hour: Would you like passed hors d’ oeuvres, a stationary table for your guests to graze, or a combination of the two?
Courses: Would you like to have a first course or have all the food served at once? Would you like your meal to be served as a buffet, family style, or would you like each meal to be individually plated?
Dessert: Will you be doing a classic wedding cake, a selection of smaller desserts, or a combination of the two? The Hindquarter does not provide wedding cakes but we can do smaller desserts.

Here are a few sample menus and a photo gallery to give you an idea of what your event can look like. In addition to these we will provide our clients with a list of unique dishes from which to build a customized menu.
