The Hindquarter started as a red food truck which was a regular fixture at The South End Truck Stop for several years. The truck got a bit of a following and was popular for serving up late night fare at weddings.
Fast forward a few years and The Hindquarter is a full fledged catering operation specializing in cooking fresh and locally sourced food over open flame (the truck is no longer).
The company caters weddings and events of all sizes throughout Vermont and into New York and New Hampshire with chefs and servers who are steeped in the trade and have years of experience. The team of chefs is headed by chef and owner, Luke Stone, who grew up in the restaurant industry. Over the years Luke worked at a number of local establishments and catering companies before starting his own company, The Hindquarter.
The team of chefs focus on cooking their food over fire fueled by local hardwoods. They design menus that utilize seasonal produce which, in turn, supports nearby farms. During the ‘off season’ you can find the crew cutting and splitting the very wood they use the following season to cook the food.
